Preparation
  1. Chop root vegetables, finely dice onion and garlic, rinse canned beans, and prepare leafy greens.
Cooking
  1. In a pot, heat olive oil over medium heat. Add onions and garlic, sauté for 5-7 minutes until translucent.
  2. Add chopped potatoes, drained beans, canned tomatoes, and vegetable stock. Stir and simmer for 15 minutes.
  3. Add small pasta and greens, cook for another 8-10 minutes until pasta is al dente.
  4. Remove from heat, stir in fresh herbs and lemon juice. Let sit for a couple of minutes.
  5. Serve in bowls, optionally adding pesto, cheese, or olive oil.
