For the Chicken
  • 1 lb Chicken Breast boneless and skinless
  • to taste Salt
  • 2 tbsp Peanut or Coconut Oil can substitute with any neutral oil
For the Sauce
  • 1 can Canned California Cling Peaches reserve juice
  • 2 tbsp Honey or maple syrup/agave
  • 3 tbsp Soy Sauce use tamari for gluten-free
  • 1 tbsp Fish Sauce optional
  • 2 tbsp Rice Vinegar or white vinegar
  • 2 tbsp Thai Chilli Sauce or sriracha/sambal
  • 1 tbsp Lime Juice preferably fresh
  • 1 tbsp Dried Lemongrass or lime zest
  • 1 tbsp Cornstarch or arrowroot powder
For the Veggies
  • 1 medium Red Bell Pepper sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
For Garnishing
  • 2 tbsp Chopped Peanuts omit for nut allergies
  • 2 tbsp Fresh Cilantro or parsley/basil

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium-high heat for 1-2 minutes until shimmering.
  2. Season the chicken with salt and sear in the skillet for 3 minutes on each side until browned. Remove and set aside.
  3. Reduce heat to medium-low, add onion, garlic, and ginger. Sauté for about 3 minutes until fragrant.
  4. Prepare the sauce by whisking together reserved peach juice, honey, rice vinegar, soy sauce, lime juice, and cornstarch in a bowl.
  5. Combine the chicken back in the skillet with red bell pepper and peach slices, then add sauce. Simmer for about 5 minutes.
  6. Garnish with peanuts and cilantro before serving. Pair with jasmine rice or noodles.
