For Garnishing
  • 1/4 cup Fresh Basil Use parsley or spinach if needed.
  • 1/2 cup Parmesan Cheese Opt for plant-based cheese for a vegan option.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Combine cherry tomatoes, red bell pepper, zucchini, red onion, and minced garlic in a mixing bowl.
  3. Drizzle with olive oil, sprinkle with Italian seasoning, salt, and black pepper, and toss to coat.
  4. Spread seasoned vegetables on the baking sheet and roast for 20-25 minutes, stirring halfway.
  5. Cook the penne pasta in salted water according to package instructions for about 8-10 minutes.
  6. Reserve 1/4 cup of pasta cooking water before draining.
  7. Mix the pasta with the roasted vegetables and juices from the baking sheet.
  8. Add grated Parmesan cheese, chopped basil, and lemon juice, tossing in reserved pasta water until desired consistency.
  9. Taste and adjust seasoning with salt and pepper before serving garnished with extra Parmesan and basil.
