Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and lightly grease the baking dish with olive oil or cooking spray.
  2. Slice the sweet potatoes, butternut squash, and carrots into thin, even layers about 1/8 inch thick.
  3. Begin layering the lasagna, starting with sweet potato slices, followed by butternut squash, then carrots, adding feta and walnuts in between layers.
  4. Continue layering until all vegetables are used, finishing with a top layer of vibrant vegetables and leaving some feta and walnuts aside.
  5. Drizzle the cranberry-honey glaze generously over the top layer.
  6. Bake in the preheated oven for about 45 minutes until the vegetables are tender and the top layer is golden.
  7. Let the lasagna rest for 10 minutes before slicing.
  8. Slice and garnish with fresh thyme or basil before serving.
