Preparation
- Preheat your oven to 325°F (160°C) and lightly grease the baking dish with olive oil or cooking spray.
- Slice the sweet potatoes, butternut squash, and carrots into thin, even layers about 1/8 inch thick.
- Begin layering the lasagna, starting with sweet potato slices, followed by butternut squash, then carrots, adding feta and walnuts in between layers.
- Continue layering until all vegetables are used, finishing with a top layer of vibrant vegetables and leaving some feta and walnuts aside.
- Drizzle the cranberry-honey glaze generously over the top layer.
- Bake in the preheated oven for about 45 minutes until the vegetables are tender and the top layer is golden.
- Let the lasagna rest for 10 minutes before slicing.
- Slice and garnish with fresh thyme or basil before serving.
