Ingredients
  

For the Skewers
  • 2 cups Sweet Potatoes Peeled and cut into 1-inch cubes
  • 8 slices Bacon Regular or turkey bacon
  • 2 tablespoons Brown Sugar For caramelization
  • 2 tablespoons Maple Syrup or Honey For glaze
  • 2 tablespoons Olive Oil or Melted Butter
For the Glaze
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cayenne or Chili Powder For spice
  • 1 teaspoon Garlic Powder Optional
  • 2 teaspoons Fresh Herbs Rosemary or thyme, optional
  • 1 teaspoon Sea Salt
Dipping Sauces (optional)
  • 1 cup Marshmallow Fluff
  • 1/2 cup Spicy Aioli
  • 1/3 cup Maple Mustard

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or prepare your grill for indirect cooking.
  2. Line a baking sheet with parchment paper or foil.
  3. Bring a large pot of water to a boil and parboil sweet potato cubes for 5–7 minutes until fork-tender.
  4. Drain and let the sweet potatoes cool slightly.
  5. In a mixing bowl, whisk together brown sugar, maple syrup or honey, olive oil or melted butter, cinnamon, cayenne, and garlic powder.
  6. Toss parboiled sweet potato cubes in the glaze until evenly coated.
  7. Wrap glazed sweet potato cubes with bacon on skewers.
  8. Place skewers on a baking sheet or wire rack.
  9. Roast skewers in the oven for 25–30 minutes, flipping halfway through.
  10. Brush with any remaining glaze during the last 5 minutes of roasting.
  11. Serve warm with dipping sauces and garnish with fresh herbs or sea salt.
