- Start by lining a baking sheet with parchment paper and sprinkling a generous layer of granulated sugar on top. Gather your ingredients and measure them out.
- In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Place the pan over medium heat and stir continuously for about 3-4 minutes until clear.
- Once dissolved, stop stirring and let the syrup boil undisturbed to a hard crack stage at 300°F (150°C), taking about 10-15 minutes.
- Remove from heat and quickly mix in the fresh lemon juice, lemon zest, lemon extract, and yellow food coloring.
