  1. Start by lining a baking sheet with parchment paper and sprinkling a generous layer of granulated sugar on top. Gather your ingredients and measure them out.
  2. In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Place the pan over medium heat and stir continuously for about 3-4 minutes until clear.
  3. Once dissolved, stop stirring and let the syrup boil undisturbed to a hard crack stage at 300°F (150°C), taking about 10-15 minutes.
  4. Remove from heat and quickly mix in the fresh lemon juice, lemon zest, lemon extract, and yellow food coloring.
  5. Spoon small amounts of the lemon mixture onto the prepared baking sheet to create evenly sized drops.
  6. Allow to cool for a few minutes, then roll each drop in granulated sugar to coat.
