- Cut 1½ lbs of chicken into bite-sized pieces. Toss with 2 tbsp cornstarch, salt, and pepper. Set aside.
- Heat 1 tbsp oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes until golden brown.
- Add 1 tbsp oil, 3 minced garlic cloves, and 1 tbsp grated ginger to the skillet. Sauté for 1 minute.
- Return chicken to the skillet. Add ¼ cup chili sauce, 2 tbsp soy sauce, 1 tbsp honey, and 1–2 tsp sriracha. Stir to combine.
- Reduce heat, simmer for 3–4 minutes, adding cornstarch slurry if desired.
- Squeeze juice of ½ lime into the skillet, garnish with onions, sesame seeds, and cilantro, and serve.
