  • 1/2 cup Feta Cheese or omit for a lighter salad
  • 1/4 cup Cilantro omit if not preferred
For the Dressing
  • 1/2 cup Mayonnaise Greek yogurt can substitute
  • 1/2 cup Sour Cream or additional Greek yogurt
  • 2 tablespoons Lime Juice lemon juice works well as a substitute
  • 1 teaspoon Chili Powder adjust based on desired heat level
  • to taste Salt & Pepper enhance overall taste

Preparation Steps
  1. Step 1: Cook the Corn - Bring a large pot of water to a boil. Add fresh corn and cook for 5–7 minutes. Drain and let it cool.
  2. Step 2: Combine Veggies - In a mixing bowl, combine cooled corn, diced cucumber, halved cherry tomatoes, and red onion. Toss gently.
  3. Step 3: Prepare Dressing - Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Step 4: Mix Together - Pour dressing over the vegetable mixture and toss until all ingredients are well-coated.
