Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a ceramic baking dish with butter.
  2. Peel the Yukon gold potatoes and slice them thinly—aim for about 1/8 inch.
  3. In a large pot, melt 4 tablespoons of unsalted butter over medium heat, add minced garlic, and sauté for about 1 minute.
  4. Sprinkle in 1/4 cup of all-purpose flour while stirring continuously to create a roux, then whisk in 2 cups of heavy cream.
  5. Once the sauce has thickened, stir in 1 cup of grated Parmesan cheese and 1 tablespoon of fresh thyme.
  6. Add the sliced Yukon gold potatoes into the creamy sauce and gently toss to coat.
  7. Layer the coated potato slices in the greased baking dish, pour any remaining sauce over the top, and sprinkle with extra Parmesan.
  8. Cover with aluminum foil and bake for 30 minutes; then remove foil and bake for another 30 minutes until golden.
