- Boil a large pot of water over high heat. Once boiling, add noodles and cook according to package instructions, typically 8-10 minutes, until al dente. Drain and rinse under cold water.
- In a medium mixing bowl, combine peanut butter, soy sauce, sesame oil, and honey or maple syrup. Whisk smoothly for about 2-3 minutes, adding warm water if too thick.
- Transfer the cooled noodles to a mixing bowl and pour the peanut sauce over them. Toss gently for about 1-2 minutes until evenly coated.
- Stir in the chopped green onions and chopped peanuts. Mix for another minute, adding any leftover veggies if desired.
- Scoop the noodles into serving bowls and garnish with sesame seeds. Enjoy warm or chilled.
