Ingredients
  

Sauce
  • 0.25 cups soy sauce substitute with tamari for gluten-free
  • 2 tablespoons brown sugar can replace with honey or coconut sugar
  • 1 tablespoon rice vinegar apple cider vinegar can be used as a substitute
  • 2 tablespoons water no substitution needed
  • 1 tablespoon cornstarch arrowroot powder can be used as a keto-friendly alternative
  • 1 tablespoon sesame oil use extra virgin olive oil if unavailable
Cooking
  • 1-2 tablespoons oil (for cooking) avocado or canola oil work well
  • 1 pound ground beef use 80/20 for flavor or 90/10 for leaner version
  • 3-4 cloves garlic fresh is preferred for best flavor
  • 1 inch ginger fresh ginger recommended
Vegetables
  • 1 head broccoli fresh is best for crunch but frozen can work
Pasta
  • 1 pound pasta (e.g., fettuccine) any pasta type will suffice

Method
 

Cooking Instructions
  1. Begin by bringing a large pot of salted water to a boil. Add your choice of pasta, such as fettuccine, and cook according to the package instructions for about 8-10 minutes until al dente. Reserve a cup of pasta water, then drain the pasta and set aside.
  2. While the pasta cooks, mince the garlic and grate the ginger. Wash and cut your broccoli into bite-sized florets.
  3. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, water, cornstarch, and sesame oil.
  4. Heat cooking oil in a large skillet over medium-high heat, then add ground beef. Cook for about 4-5 minutes until browned. Drain excess fat.
  5. Add minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds until fragrant.
  6. Add broccoli florets and 1/4 cup of water to the skillet. Cover and steam for 2-3 minutes until bright green and tender-crisp.
  7. Pour in the sauce mixture over the beef and broccoli. Cook for an additional 2-3 minutes until the sauce thickens.
  8. Add the cooked pasta to the skillet, tossing gently to coat with the sauce. Add reserved pasta water if needed, and cook for an additional minute.
