  • 4 cloves Minced Garlic fresh preferred
  • 1 juice Lemon or lime juice
  • 2 teaspoons Oregano or Italian seasoning
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika or ground coriander
  • to taste Salt sea salt recommended
  • to taste Pepper freshly cracked recommended
  • 2 pounds Chicken Breasts or thighs
Pita & Tzatziki
  • 4 Pita/Flatbreads or tortillas
  • 1 cup Greek Yogurt or sour cream
  • ¼ cup Feta Cheese or goat cheese
  • ½ cup Grated Cucumber or chopped cooked zucchini
  • 1 tablespoon Dill or mint
  • 1 tablespoon Mint or dill
  • ½ juice Lemon
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. In a large bowl, whisk together olive oil, minced garlic, lemon juice, oregano, cumin, paprika, salt, and pepper.
  2. Add chicken breasts to the marinade, ensuring they are fully coated. Refrigerate for 1 hour to overnight.
  3. In a separate bowl, combine Greek yogurt, feta cheese, grated cucumber, minced garlic, dill, mint, lemon juice, salt, and pepper. Mix and refrigerate.
  4. Preheat your grill to medium-high heat.
  5. Grill the chicken for 6-7 minutes per side until fully cooked.
  6. Let the grilled chicken rest for 5 minutes before slicing.
  7. Warm pita bread on the grill for about 1 minute per side.
  8. Assemble by placing sliced chicken, tzatziki, and fresh vegetables in pita.
