Step‑by‑Step Instructions for Easy Falafel Curry
  1. Heat coconut oil in a large pan over medium heat for about 1 minute until melted. Add diced onion and sauté for 5-6 minutes until soft.
  2. Stir in minced garlic and freshly grated ginger, cooking for an additional 30 seconds until fragrant.
  3. Mix in diced red bell pepper and sliced zucchini, cooking for 3-4 minutes until slightly tender.
  4. Stir in tikka masala curry paste and simmer for about 1 minute, allowing the flavors to blend.
  5. Pour in tomato sauce and coconut milk, stirring until smooth. Bring to a gentle simmer for 3-5 minutes.
  6. Nestle cooked falafel into the sauce and simmer uncovered for 8-10 minutes, stirring occasionally.
