Step-by-Step Instructions
  1. Prepare all vegetables and chicken. Cut chicken breast into bite-sized pieces and slice vegetables.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown.
  3. Sauté red onion and garlic in the same skillet for 1-2 minutes, then add red bell peppers and cook until tender.
  4. Return chicken to skillet, add dried herbs, and toss to combine.
  5. Stir in cherry tomatoes, sun-dried tomatoes, and olives. Cook until tomatoes soften.
