Ingredients
  

For the Beef Marinade
  • 1 pound Flank Steak can substitute with sirloin or skirt steak if sliced thinly against the grain
  • 1 teaspoon Baking Soda tenderizes the beef; do not skip
  • 3 tablespoons Soy Sauce (low sodium) use regular for richer taste
  • 1 tablespoon Sesame Oil can substitute with olive oil if unavailable
  • 1 teaspoon White Pepper black pepper can be used as a substitute
  • 2 tablespoons Cornstarch helps thicken the sauce
For the Sauce
  • 3 tablespoons Oyster Sauce can substitute with hoisin sauce
  • 1 teaspoon Sichuan Peppercorns can be omitted
  • 2 teaspoons Black Pepper coarsely ground
  • 2 tablespoons Shaoxing Wine can substitute with dry sherry or mirin
  • 1 teaspoon Sugar adjust to taste
  • 1 tablespoon Cornstarch additional for the sauce
For Stir-Frying
  • cup Vegetable Oil can substitute with canola or peanut oil
  • 3 cloves Garlic fresh preferred
  • 1 medium Onion sliced
  • 1 medium Red Bell Pepper sliced

Method
 

Marinating and Cooking Steps
  1. In a mixing bowl, combine thinly sliced flank steak with baking soda, low-sodium soy sauce, sesame oil, white pepper, and cornstarch. Let it marinate for at least 20 minutes.
  2. In a separate bowl, whisk together oyster sauce, Sichuan peppercorns, black pepper, Shaoxing wine, soy sauces, sugar, and additional cornstarch. Set it aside.
  3. Place a wok over high heat, add ⅓ cup of vegetable oil, and heat until it shimmers.
  4. Carefully add half of the marinated beef to the hot wok and sear for 2-3 minutes until browned. Repeat with remaining beef.
  5. Drain excess oil from the wok, leaving about 2 tablespoons. Sauté minced garlic for about 30 seconds until fragrant.
  6. Add sliced onions and red bell pepper to the wok. Stir-fry for approximately 1 minute until tender.
  7. Return the seared beef to the wok, pour in the prepared sauce, and toss everything together quickly until well-coated.
  8. Drizzle with sesame oil and serve over rice or noodles.
