Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. Dice sweet potatoes into uniform cubes. Toss with half of the olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes, stirring halfway.
  3. Heat remaining olive oil over medium heat in a skillet. Add diced onion and sauté for 5-7 minutes until softened.
  4. Add ground beef to the skillet with the onions. Cook until browned (about 6-8 minutes), then stir in taco seasoning and a splash of water. Simmer until thickened.
  5. Assemble the bowls by layering roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese.
  6. Drizzle with hot honey before serving. Add toppings like fresh herbs or pickled onions if desired.
