Step-by-Step Instructions
  1. Begin by preparing your ingredients. Chop chicken breasts, dice red onion, zucchini, red bell pepper, and garlic, and halve cherry tomatoes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken pieces and sear for 7-8 minutes until golden and cooked through.
  3. In the same skillet, add the remaining tablespoon of olive oil. Heat, then add red onion and minced garlic. Sauté for 1 minute until fragrant.
  4. Add zucchini and red bell peppers, cooking for an additional 3-4 minutes until tender but vibrant.
  5. Return the seared chicken to the skillet, add sun-dried tomatoes and Kalamata olives, along with herbs and seasoning. Toss and heat for 2-3 minutes.
  6. Turn off heat, drizzle with lemon juice, and sprinkle feta cheese on top, mixing gently. Serve immediately, garnished with fresh parsley.
