- In a large skillet over medium heat, drizzle a bit of oil and sear the seasoned chicken for about 5 minutes on each side until it turns golden brown.
- In a small bowl, whisk together BBQ sauce and honey until well combined. Pour over the browned chicken in the skillet.
- Add the rice and chicken broth to the skillet, stirring gently to combine all ingredients.
- Bring the mixture to a gentle simmer over medium heat, then cover with a lid. Reduce heat to low and cook for approximately 20 minutes.
- In the last 5 minutes of cooking, add mixed vegetables on top of the rice and chicken. Cover skillet again.
- Remove the skillet from heat and let it sit, covered, for about 5 minutes before fluffing with a fork.
- Scoop into bowls or onto plates and garnish with chopped green onions or parsley, if desired.
