Ingredients
  

For the Chicken
  • 1 lb Chicken thighs or breasts Feel free to substitute with pork or tofu.
For the Seasoning
  • 1 tsp Garlic Powder Fresh garlic can also be used.
  • 1 tsp Onion Powder Can replace with fresh onions if desired.
  • 1 tsp Smoked Paprika Regular paprika is a milder alternative.
  • Salt & Pepper Essential for seasoning; adjust to taste.
For the Sauce & Sweets
  • 1 cup BBQ Sauce Use your favorite brand or homemade.
  • 2 tbsp Honey Maple syrup can be a substitute.
For the Base
  • 1 cup Rice Long grain or basmati rice works well.
  • 2 cups Chicken Broth Can use water but not as flavorful.
For the Veggies
  • 2 cups Mixed Vegetables Like bell peppers and broccoli.

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, drizzle a bit of oil and sear the seasoned chicken for about 5 minutes on each side until it turns golden brown.
  2. In a small bowl, whisk together BBQ sauce and honey until well combined. Pour over the browned chicken in the skillet.
  3. Add the rice and chicken broth to the skillet, stirring gently to combine all ingredients.
  4. Bring the mixture to a gentle simmer over medium heat, then cover with a lid. Reduce heat to low and cook for approximately 20 minutes.
  5. In the last 5 minutes of cooking, add mixed vegetables on top of the rice and chicken. Cover skillet again.
  6. Remove the skillet from heat and let it sit, covered, for about 5 minutes before fluffing with a fork.
  7. Scoop into bowls or onto plates and garnish with chopped green onions or parsley, if desired.
