  • 4 large tortillas flour or corn
  • 2 cups cooked rice or quinoa
  • 1 can black beans drained and rinsed
  • 1 cup bell peppers sliced
  • 1 medium red onion sliced
  • 1 medium avocado sliced
  • 1/4 cup fresh cilantro chopped

Step-by-Step Instructions
  1. In a large bowl, combine shrimp, olive oil, minced garlic, Old Bay seasoning, salt, and pepper. Toss until well-coated. Allow to sit for 15-20 minutes.
  2. Heat a non-stick skillet over medium-high heat. Add marinated shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque.
  3. Warm tortillas in a dry skillet over medium heat for about 20-30 seconds on each side.
  4. Lay a tortilla flat, then layer cooked rice, black beans, shrimp, bell peppers, onion, and avocado. Top with cilantro and lime juice.
  5. Fold the sides of the tortilla snugly, then roll upwards to secure fillings.
  6. Slice each burrito in half and serve with lime wedges and salsa for dipping.
