  • 2 tablespoons Cinnamon-Sugar Mixture 3/4 tsp cinnamon per 1 tbsp sugar

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans or line with parchment paper.
  2. In a large bowl, whisk together egg, white sugar, and brown sugar until smooth. Add pumpkin puree, oil, and vanilla, mixing until combined.
  3. Sift together flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet ingredients. Fold gently until just mixed.
  4. Scoop the batter into mini loaf pans, filling two-thirds full. Sprinkle cinnamon-sugar mixture on top.
  5. Gently swirl the cinnamon-sugar into the batter. Bake for 28-30 minutes until a toothpick comes out clean.
  6. Let the mini loaves cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.
