- Preheat your oven to 350°F (175°C). Grease mini loaf pans or line with parchment paper.
- In a large bowl, whisk together egg, white sugar, and brown sugar until smooth. Add pumpkin puree, oil, and vanilla, mixing until combined.
- Sift together flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet ingredients. Fold gently until just mixed.
- Scoop the batter into mini loaf pans, filling two-thirds full. Sprinkle cinnamon-sugar mixture on top.
- Gently swirl the cinnamon-sugar into the batter. Bake for 28-30 minutes until a toothpick comes out clean.
- Let the mini loaves cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.
