- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lay out strips of bacon. Bake for 15-20 minutes until crispy.
- Remove bacon and let it cool on paper towels. Chop the cooled bacon and mix with goat cheese using a fork until well combined.
- Scoop the mixture onto a sheet of parchment paper and mold into a log shape, about 12 inches long. Wrap tightly with parchment.
- Chill log in the refrigerator for at least 30 minutes. Optionally, toast your crostini until golden.
- Remove the log from the fridge, unwrap, and drizzle hot honey over the top before serving.
- Slice the log into thick pieces and serve with crostini for dipping.
