  • 2 tablespoons Lemon Juice Fresh juice is preferred
  • 2 cloves Garlic Minced, can substitute with garlic powder
  • 1 teaspoon Dried Oregano Can use Italian seasoning as an alternative

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Prick the sweet potatoes several times with a fork, place on the baking sheet, and bake for 40–50 minutes until tender.
  3. In a large bowl, mix combined chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  4. In a small bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper together.
  5. Pour the dressing over the filling mixture and toss gently to coat.
  6. Once sweet potatoes are tender, remove and let cool slightly. Slice each potato lengthwise and fluff the inside.
  7. Stuff the sweet potatoes with the filling mixture, packing it in generously.
  8. Serve warm, garnished with extra parsley or a drizzle of olive oil if desired.
