Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Peel and cube your sweet potatoes, then drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat and spread on a baking sheet lined with parchment paper.
  2. Bake the sweet potatoes for 25-30 minutes, stirring halfway through to ensure even roasting. They are done when tender and golden brown.
  3. In a skillet over medium heat, cook the bacon until crispy and golden, about 8-10 minutes. Remove bacon and leave the rendered fat in the pan.
  4. In the same skillet, sauté the sliced onions over medium heat for 10-12 minutes until golden brown and soft.
