Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel the apples and carrots, then chop them into uniform, bite-sized pieces.
  3. In a small mixing bowl, whisk together Dijon mustard, maple syrup, and olive oil until smooth.
  4. In a large mixing bowl, combine the chopped apples and carrots with the maple-Dijon glaze and toss until coated.
  5. Line a baking sheet with parchment paper and spread the glazed apples and carrots in a single layer.
  6. Roast the mixture for 25-30 minutes, stirring halfway through.
  7. Once roasted, let it cool slightly and transfer to a serving platter.
