Method
 

Steps
  1. Preheat your oven to 400°F (200°C). Pat the chicken pieces dry and season generously with salt and pepper. Drizzle with olive oil.
  2. Peel and cube your sweet potatoes into bite-sized pieces. Toss them with olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for about 30 minutes, stirring halfway through.

  4. Place the seasoned chicken on a baking sheet and bake for 20–25 minutes, brushing with the maple Dijon sauce during the last few minutes.
  5. Assemble your bowls with a base of grains, topped with roasted sweet potatoes and fresh greens, then add the glazed chicken and any remaining sauce.
