Prepare the Mixture
- In a large mixing bowl, combine Greek yogurt, sweetener, lemon juice, and lemon zest. Whisk together for about 2–3 minutes until creamy.
Churn in an Ice Cream Maker
- Pour the mixture into the pre-chilled bowl of the ice cream maker. Churn for 20–30 minutes until thickened to soft-serve consistency.
Freeze Without an Ice Cream Maker
- Pour the mixture into an ice cube tray and freeze for 4-6 hours or until solid.
Blend the Frozen Cubes
- Once frozen, remove the yogurt cubes and let them thaw for 5 minutes. Blend in a high-speed blender until smooth and creamy.
Serve or Store
- Serve immediately for soft-serve texture or transfer to an airtight container and freeze for 1-2 hours for a firmer consistency.
