- In a saucepan over low heat, melt 2 tablespoons of unsalted butter. Whisk in 4 ounces of cream cheese until smooth, then gradually add ½ cup of heavy whipping cream, stirring continuously. Blend in 1 cup of shredded cheddar cheese until melted.
- In a skillet over medium-high heat, add 1 pound of ground beef and cook for 5-7 minutes until browned. Drain excess fat, mix in 1 tablespoon of taco seasoning and a splash of water, then simmer for 5 minutes.
- Heat 1 tablespoon of olive oil in the same skillet. Fry 2 low-carb tortillas for about 1-2 minutes on each side until golden and crispy. Set aside on paper towel.
- Lay a large tortilla flat. Spoon seasoned beef in the center, add cheese sauce, top with a smaller tortilla, sour cream, lettuce, tomatoes, and shredded cheddar.
- Fold the edges of the large tortilla over the filling, seam-side down in the skillet. Cook for 3-4 minutes until golden and crispy on both sides.
- Cut in half and serve warm with cilantro and optional jalapeño slices.
