  • 1 cup plain Greek yogurt substitute with non-dairy yogurt for dairy-free
  • 2 tablespoons olive oil replace with lemon juice for a lighter flavor
  • 1 unit fresh lemon juice & zest lime juice can be used for a different flavor
  • 3 cloves garlic (minced) fresh garlic preferred
  • 1 teaspoon dried oregano substitutes: thyme or Italian herbs
  • 1 teaspoon salt adjust according to taste
  • 1/2 teaspoon black pepper substitute: white pepper for a milder taste
  • 1/2 teaspoon ground cumin (optional) can be omitted

  • 1.5 pounds chicken tenders or sliced chicken breast/thighs
Garnish
  • 1/4 cup fresh parsley or dill (optional) adds visual appeal

Method
 

Preparation
  1. In a large mixing bowl, combine yogurt, olive oil, lemon juice and zest, and minced garlic. Add oregano, salt, pepper, and cumin if desired. Whisk until smooth.
  2. Coat chicken tenders in the marinade, ensuring they're fully covered. Refrigerate for at least 30 minutes, preferably 4 to 8 hours.
  3. Preheat your grill, oven, or skillet. Grill to medium-high heat, or bake at 400°F and prepare a skillet over medium heat.
  4. Cook chicken tenders: grill for 3-4 minutes per side, sear for 3-4 minutes on each side, or bake for 18-20 minutes.
  5. Allow cooked tenders to rest for 3-5 minutes before serving. Garnish with parsley or dill.
