Cooking Steps
  1. In a large skillet, heat a drizzle of oil over medium heat. Season your chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes per side, or until they develop a golden-brown crust.
  2. While the chicken is sizzling, whisk together the BBQ sauce and honey in a small bowl. Pour this mixture over the chicken in the skillet, coating it thoroughly.
  3. Add the long-grain white rice to the skillet, followed by the chicken broth. Stir gently to combine.
  4. Bring the skillet to a gentle simmer, then reduce to low and cover with a lid. Cook for about 20 minutes.
  5. With 5 minutes left, add your choice of mixed vegetables over the top and let them steam.
