For the Chicken
  • 1 pound skinless chicken thighs substitute with bone-in thighs for richer flavor
For the Sauce
  • 2 tablespoons olive oil avocado oil can be a substitute
  • 28 ounces crushed tomatoes diced or whole tomatoes can also be used
  • 2 tablespoons tomato paste
For the Aromatics
  • 4 cloves garlic fresh garlic is recommended
  • 1 large onion
  • 8 ounces white mushrooms can substitute with other mushroom varieties
  • 1 large red bell pepper any sweet bell pepper works well
  • 1 stalk celery can be omitted if unavailable
  • 1 large carrot parsnips can be used as an alternative
For Seasoning
  • 1 teaspoon garlic powder adjust based on fresh garlic used
  • 1 tablespoon fresh rosemary dried can substitute
  • 1 teaspoon fresh sage dried can substitute
  • 2 teaspoons salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
  • 1/2 teaspoon red pepper flakes can be omitted for a milder dish
For Garnish
  • 1/4 cup fresh basil substitutes include parsley or oregano

Method
 

Step-by-Step Instructions
  1. Heat a large cast iron pot over medium-high heat. Add olive oil and place the seasoned chicken thighs in the pot. Brown each thigh for about 3 minutes on both sides, then remove and set aside.
  2. In the same pot, add chopped onions, celery, carrots, and red bell pepper. Sprinkle with salt and sauté for around 3 minutes. Add minced garlic and sliced mushrooms, cooking for an additional 4 minutes.
  3. Stir in crushed tomatoes and tomato paste. Add rosemary, sage, garlic powder, salt, black pepper, and red pepper flakes, mixing well. Nestle browned chicken back into the pot.
  4. Preheat oven to 350°F (175°C). Cover the pot with a lid and transfer to the oven. Bake for 50 minutes, then remove lid and bake for an additional 20 minutes.
  5. Remove from oven, let it rest for a few minutes, and garnish with chopped basil before serving.
