Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure it's hot and ready for baking.
  2. Peel and dice the potatoes into small cubes, about half an inch.
  3. Chop the onion and mince the garlic.
  4. Heat the olive oil in a skillet over medium heat. Sauté the onion and garlic for 3-4 minutes until fragrant.
  5. Add the ground beef to the skillet, season with salt, pepper, thyme, and paprika. Cook for 5-7 minutes until browned.
  6. Pour in the beef broth, stirring well and let simmer for 2-3 minutes.
  7. In a mixing bowl, fold together the diced potatoes with the beef mixture, sour cream, and half of the cheddar cheese.
  8. Transfer the mixture to a baking dish and layer the remaining cheese on top.
  9. Cover tightly with aluminum foil and bake for 30 minutes.
  10. Uncover and bake for an additional 10-15 minutes until the cheese is melted and golden.
  11. Let the casserole rest for about 10 minutes before serving.
