For the Marinade
  • 1 tablespoon Fresh Ginger Grated; ground ginger can be used in a pinch.
  • 1/4 cup Low-Sodium Soy Sauce Use tamari for a gluten-free version.
  • 2 tablespoons Honey Maple syrup works as a vegan alternative.
  • 1 tablespoon Lemon Juice Lime juice or rice vinegar can be used as alternatives.
For Garnish
  • 2 tablespoons Green Onions Chives can be a substitute.
  • Toasted Sesame Seeds Optional; can be omitted.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized mixing bowl, whisk together the low-sodium soy sauce, honey, freshly grated ginger, and lemon juice until well combined.
  3. Place the cod fillets in a shallow dish or resealable bag and pour half of the prepared marinade over them. Let them marinate in the refrigerator for 15 to 30 minutes.
  4. Take a greased baking sheet and arrange the fillets in a single layer. Brush the remaining marinade over the top.
  5. Slide the baking sheet into the preheated oven and bake the Ginger Soy Glazed Cod for about 12 to 15 minutes.
  6. While the cod is baking, heat a small skillet over medium heat. Add the sesame seeds and toast them until golden brown and fragrant.
  7. Once the cod is finished baking, transfer the fillets to a serving platter. Garnish with chopped green onions and sprinkle the toasted sesame seeds on top.
