Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your 9-inch round cake pan.
  2. Peel and chop your sweet potatoes into small chunks, boil for 15-20 minutes until tender, then mash until smooth.
  3. Combine mashed sweet potatoes, almond butter, maple syrup, eggs, and vanilla extract in a large mixing bowl and mix until creamy.
  4. Add freshly grated ginger, cinnamon, nutmeg, cloves, and salt, mixing until fully incorporated.
  5. Sprinkle baking soda over the batter and gently fold it in.
  6. Pour the batter into the prepared cake pan and smooth out the top.
  7. Bake in the preheated oven for 30-35 minutes until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
