- In a medium saucepan, place whole oranges and cover them with water. Bring to a boil and simmer for about 30 minutes until tender.
- Drain the oranges and let them cool before blending them into a smooth puree.
- In a large mixing bowl, combine orange puree, ground pistachios, sugar, eggs, baking powder, and vanilla extract. Mix until smooth.
- Preheat your oven to 350°F (175°C), and prepare a 9-inch springform pan.
- Pour the batter into the prepared pan and bake for 50 minutes.
- Once baked, let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- Slice and serve, optionally topping with Greek yogurt or crème fraîche.
