For the Cake
  • 3 whole Oranges Use fresh boiled oranges for best results.
  • 2 cups Ground Pistachios Butter richness replaces flour.
  • 1 cup Sugar Coconut sugar can be used as a substitute.
  • 4 large Eggs Essential for binding and lift.
  • 1 teaspoon Baking Powder Ensure it's fresh for best results.
  • 1 teaspoon Vanilla Extract Can substitute with orange blossom water.
Optional Topping
  • 1 cup Greek Yogurt or Crème Fraiche Adds creaminess and complements flavors.

Method
 

Directions
  1. In a medium saucepan, place whole oranges and cover them with water. Bring to a boil and simmer for about 30 minutes until tender.
  2. Drain the oranges and let them cool before blending them into a smooth puree.
  3. In a large mixing bowl, combine orange puree, ground pistachios, sugar, eggs, baking powder, and vanilla extract. Mix until smooth.
  4. Preheat your oven to 350°F (175°C), and prepare a 9-inch springform pan.
  5. Pour the batter into the prepared pan and bake for 50 minutes.
  6. Once baked, let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  7. Slice and serve, optionally topping with Greek yogurt or crème fraîche.
