- Preheat your oven to 325°F (163°C) and prepare a mini muffin tin with nonstick cooking spray.
- In a large mixing bowl, whisk together the cake mix and flour until well combined.
- Add melted butter, egg, egg yolk, and vanilla extract to the dry mixture; stir gently until just combined.
- Scoop portions of the dough, roll them into balls, and coat in granulated sugar before placing them in the muffin tin.
- Bake for approximately 14 minutes until puffed and soft; do not let them brown.
- While cookies are warm, press indents into the centers to form cups using the handle of a spoon.
- Cool in the tin for 5-10 minutes before transferring to a wire rack.
- In a microwave-safe bowl, combine white chocolate chips and heavy cream; microwave in 20-second increments until smooth.
- Spoon the warm ganache into each cookie cup, filling generously.
- Decorate with M&Ms to resemble bunny ears using one whole piece and two halved pieces.
- Let the ganache set for about 2 hours at room temperature before serving.
