Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare muffin tin by lining it with paper liners or greasing it.
  2. In a large mixing bowl, combine rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Fold in the grated carrots and then add the applesauce (or yogurt), vegetable oil, and vanilla extract.
  4. If you're using walnuts or raisins, fold them into the batter now.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 15-20 minutes until a toothpick inserted in the center comes out clean.
  7. Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
