- Preheat your oven to 350°F (175°C) and prepare muffin tin by lining it with paper liners or greasing it.
- In a large mixing bowl, combine rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Fold in the grated carrots and then add the applesauce (or yogurt), vegetable oil, and vanilla extract.
- If you're using walnuts or raisins, fold them into the batter now.
- Fill each muffin cup about two-thirds full with the batter.
