For the Fish
  • 4 fillets white fish 1-inch thick, thawed if frozen
  • to taste salt
  • to taste pepper
  • ½ cup all-purpose flour for coating
For the Sauce
  • 2 tablespoons olive oil for frying
  • 2 tablespoons butter or extra olive oil for dairy-free
  • 2 cloves garlic minced
  • 1 juice of lemon adjust to taste
  • ½ cup chicken or vegetable broth low-sodium recommended
  • 2 tablespoons capers or green olives if needed
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Pat the white fish fillets dry and season with salt and pepper. Lightly coat each fillet with all-purpose flour.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Cook the coated fish fillets in the skillet undisturbed for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
  3. Remove the fish from the skillet, tent with foil to keep warm while preparing the sauce.
  4. In the same skillet, add 2 tablespoons of butter and melt. Add minced garlic and sauté until fragrant, about 30 seconds.
  5. Pour in fresh lemon juice and broth, scraping up browned bits. Simmer for 2-3 minutes until slightly thickened.
  6. Return the fish to the skillet, spooning sauce over to infuse flavor. Heat through for 1 minute.
  7. Serve on plates, garnished with chopped parsley. Enjoy immediately.
