- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- Melt dark chocolate chips with coconut oil in a microwave-safe bowl, microwaving in increments, stirring until smooth.
- Mix together the mixed nuts, rolled oats, honey or maple syrup, and vanilla extract until well combined, then add half of the melted chocolate.
- Press the mixture into the prepared pan, drizzle remaining melted chocolate on top and spread evenly.
- Bake for 15-20 minutes or until the top is golden brown and firm to the touch.
- Sprinkle sea salt on top while warm, cool completely, then lift the bars out using the parchment and cut into squares.
