Method
 

  1. In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium-low heat. Add 3 sliced yellow onions and sprinkle 1 teaspoon of sugar. Cook until onions are golden brown and caramelized.
  2. Preheat your oven to 375°F (190°C). In a mixing bowl, combine 8 ounces of cream cheese, ½ cup of sour cream, and ½ cup of mayonnaise. Mix until smooth.
  3. Fold about ¾ of the caramelized onions into the cream cheese mixture with 1 cup of shredded Gruyere cheese. Mix gently.
  4. Transfer to an ovenproof skillet, top with reserved onions and thyme, bake for 20 to 25 minutes until bubbly and golden.
  5. Allow to cool for 5 minutes and serve warm with toasted baguette, tortilla chips, or fresh veggies.

Notes

For best results, slow caramelize the onions and allow the dip to cool slightly before serving. Adjust seasoning to taste.
