Step-by-Step Instructions
  1. Bring a pot of water to a rolling boil. Immerse chow mein noodles for 30 seconds to 1 minute until they soften, then drain and set aside.
  2. Combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce (if using), granulated sugar, and water. Whisk until sugar is dissolved.
  3. Heat corn oil in a wok over medium-high heat. Add yellow onions and white parts of green onions, stirring for 1 minute until fragrant.
  4. Add more corn oil to the hot wok, then add drained noodles in a single layer. Fry for about 4 minutes until golden-brown crisp.
  5. Fold in onions, green onions, and bean sprouts. Pour sauce over and gently stir, cooking for an additional 1 to 2 minutes.
  6. Remove from heat, drizzle with sesame oil and toss to combine. Serve immediately.
