Preparation
  1. Preheat your air fryer to 320°F (160°C) for about 5 minutes.

  4. Add diced carrots and frozen peas to the air fryer basket with the sautéed onions and garlic.
  5. Air fry the mixture for an additional 5 minutes at 320°F (160°C).
  6. Add the cold, leftover rice, drizzle with vegetable oil and soy sauce, and stir gently.
  7. Scramble the eggs in a separate bowl and push the rice mixture to one side, then pour in the eggs.
  8. Air fry for about 3 minutes, stirring occasionally until the eggs are cooked through.
  9. Spread the rice and egg mixture in an even layer and cook for an additional 10-12 minutes, stirring every 5 minutes.
