Preparation
- Preheat your air fryer to 320°F (160°C) for about 5 minutes.
- In a small bowl, combine diced onions and minced garlic, then transfer to the air fryer basket.
- Cook for about 3-4 minutes until the onions are translucent and fragrant.
- Add diced carrots and frozen peas to the air fryer basket with the sautéed onions and garlic.
- Air fry the mixture for an additional 5 minutes at 320°F (160°C).
- Add the cold, leftover rice, drizzle with vegetable oil and soy sauce, and stir gently.
- Scramble the eggs in a separate bowl and push the rice mixture to one side, then pour in the eggs.
- Air fry for about 3 minutes, stirring occasionally until the eggs are cooked through.
- Spread the rice and egg mixture in an even layer and cook for an additional 10-12 minutes, stirring every 5 minutes.
- Garnish with sliced green onions before serving.
