Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Spread the frozen hash browns evenly on a baking sheet. Bake for about 20 minutes, flipping halfway through, until golden brown and crispy.
  2. While the hash browns are baking, heat a skillet over medium heat. Add the bacon strips and sauté for about 6-8 minutes or until crispy. Transfer to a paper towel-lined plate to drain grease and crumble.
  3. In the same skillet, fry the eggs to your desired doneness or poach them for about 3-4 minutes until the whites are set.
  4. Whisk together egg yolks, Dijon mustard, white wine vinegar, and lemon juice in a heatproof bowl over simmering water. Gradually whisk in melted unsalted butter to create hollandaise sauce.
  5. On a serving plate, arrange crispy hash browns, sprinkle crumbled bacon, add cheddar and mozzarella cheese, then place fried eggs on top.
  6. Drizzle warm gravy over the layered hash browns and cheese, followed by a generous pour of hollandaise sauce.
  7. Garnish with fresh herbs and serve warm.
