  • 1 red bell pepper Sliced.
  • 1 yellow bell pepper Sliced.
  • 1 green bell pepper Sliced.
  • 1 large yellow onion Thinly sliced.
  • 6 garlic cloves Minced.
  • 2 lb chicken breast Sliced into 1-inch strips.
  • 1 packet fajita seasoning
  • 2 tbsp lime juice Add in the last 30 minutes.
  • 1 teaspoon chili powder

Step-by-Step Instructions
  1. Prep Ingredients: Slice 2 pounds of chicken breasts into 1-inch strips, and thinly slice the bell peppers and onion. Mince 6 garlic cloves.
  2. Layer in Crockpot: Pour half of the salsa into the bottom of your slow cooker, then layer half of your sliced bell peppers, onion, and minced garlic over it.
  3. Add Chicken: Arrange the sliced chicken strips on top, and sprinkle fajita seasoning and chili powder to season.
  4. Top with Salsa and Vegetables: Pour remaining salsa over the chicken, then add the rest of the sliced peppers and onion on top. Squeeze lime juice over the mixture.
  5. Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until chicken reaches 165°F.
  6. Shred Chicken: Once cooked, use two forks to shred the chicken in the crockpot and mix well with the peppers and onions.
