Ingredients
  

For the Tofu
  • 1 block Extra Firm Tofu well-drained and pressed
  • 1/4 cup Cornstarch
For the Marinade
  • 1/4 cup Soy Sauce (or Coconut Aminos) soy-free alternative available
  • 2 tbsp Maple Syrup
  • 1 tbsp Sesame Oil substitute with olive oil if necessary
  • 1 tbsp Rice Vinegar or apple cider vinegar
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
For Serving
  • 2 cups Cooked Rice white or brown rice both work
  • 1 cup Steamed Edamame or peas if desired
  • 1 medium Avocado ripe
  • 2 tbsp Sesame Seeds optional topping
  • 2 stalks Spring Onions optional topping

Method
 

Preparation Steps
  1. Drain and press the tofu for at least 30 minutes, then cut into 1-inch cubes.
  2. Toss the tofu cubes with cornstarch until evenly coated; let sit for 10 minutes.
  3. Pan-fry the tofu in olive oil over medium heat for about 10-15 minutes until golden brown.
  4. Blend the marinade ingredients in a blender until smooth.
  5. Pour the blended sauce over the crispy tofu and simmer for 3-5 minutes until thickened.
  6. Serve the sticky tofu over cooked rice and top with edamame, avocado, sesame seeds, and spring onions.
