- Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine 4 cups of halved Brussels sprouts and 3 large carrot batons.
- Drizzle 1 tablespoon of melted coconut oil over the vegetables and sprinkle with spices. Toss until evenly coated.
- Spread the seasoned vegetables on the prepared baking sheet in a single layer.
- Roast the vegetables for about 25 minutes until golden and tender.
- Remove from the oven and toss with the remaining tablespoon of coconut oil and 1 tablespoon of maple syrup.
