Method
 

Preparation Steps
  1. Wash the karela, slice into medium-thin rings, and sprinkle salt and turmeric. Let sit for 20 minutes.
  2. Heat oil in a pan over medium-high heat. If using mustard oil, let it smoke.
  3. Add karela rings to the hot oil, cover, and cook for 3-4 minutes. Remove lid, cook for another 4-5 minutes until golden.
  4. Sauté cumin seeds, then add chopped onions. Cook until translucent and caramelized, about 5 minutes.
  5. Combine fried karela, raisins, salt, and spices in the pan. Cook on low for 4-5 minutes.
  6. For air fryer method, coat karela rings with oil and spices. Air fry at 200°C for 14-15 minutes.
  7. Serve warm, add more spices or raisins if desired.
