Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Boil a large pot of salted water. Add pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of starchy pasta water, then drain.
  2. Blend the Sauce Ingredients: Combine silken tofu, sun-dried tomatoes, roasted red peppers, garlic, and basil in a blender. Add nutritional yeast, red pepper flakes, smoked paprika, and tomato paste. Blend until smooth.
  3. Heat the Sauce: Pour blended sauce into a medium-sized pot over medium heat. Stir occasionally for 5-7 minutes until it thickens.
  4. Combine the Pasta and Sauce: Add cooked pasta to the sauce and toss to coat. Gradually add reserved pasta water to achieve desired consistency.
  5. Serve and Enjoy: Transfer pasta to serving plates. Top with fresh basil and cheese if desired. Best enjoyed immediately.
