- Preheat your oven to 350°F (175°C).
- Thinly slice the Yukon gold potatoes and the head of garlic, about 1/8 inch thick.
- In a medium saucepan, gently heat the whole milk and heavy cream over low heat until just warm. Stir continuously and mix in the cream cheese until smooth.
- Remove from heat and stir in nutmeg, smoked paprika, dried parsley, onion powder, salt and pepper.
- Grease your baking dish with butter and layer half of the potato slices evenly at the bottom.
- Pour half of the creamy mixture over the potatoes and sprinkle half of the Gruyere and Parmigiano cheeses on top.
- Repeat layering with the remaining potato slices, cream mixture, and cheeses. Press down gently.
- Cover with aluminum foil and bake for 1 hour.
- Remove the foil and bake for another hour until the top is bubbly and golden brown.
- Let cool for 10-15 minutes before serving and garnish with freshly chopped chives.
