Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Thinly slice the Yukon gold potatoes and the head of garlic, about 1/8 inch thick.
  3. In a medium saucepan, gently heat the whole milk and heavy cream over low heat until just warm. Stir continuously and mix in the cream cheese until smooth.
  4. Remove from heat and stir in nutmeg, smoked paprika, dried parsley, onion powder, salt and pepper.
  5. Grease your baking dish with butter and layer half of the potato slices evenly at the bottom.
  6. Pour half of the creamy mixture over the potatoes and sprinkle half of the Gruyere and Parmigiano cheeses on top.
  7. Repeat layering with the remaining potato slices, cream mixture, and cheeses. Press down gently.
  8. Cover with aluminum foil and bake for 1 hour.
  9. Remove the foil and bake for another hour until the top is bubbly and golden brown.
  10. Let cool for 10-15 minutes before serving and garnish with freshly chopped chives.
