Ingredients
  

Chickpea Mixture
  • 1 can Chickpeas rinsed and drained
  • 1/4 cup Red Onion finely chopped
  • 1 tbsp Dijon Mustard
  • 2 tbsp Fresh Parsley chopped
  • 1 tbsp Capers optional
  • 2 stalks Celery diced
  • 1 tbsp Tahini
  • to taste Salt
  • to taste Pepper
Bread
  • 2 slices Bread your preferred variety
Veggies
  • 1 leaf Lettuce for crunch
  • 1/4 cup Microgreens for garnish
  • 1/2 cup Julienne Carrots
  • 1/2 cup Cucumber sliced

Equipment

  • Mixing bowl
  • Fork or potato masher
  • Sharp knife

Method
 

Chickpea Mixture Preparation
  1. In a mixing bowl, combine chickpeas, red onion, Dijon mustard, parsley, capers, celery, tahini, salt and pepper. Mash until creamy with some chickpeas intact.
  2. Taste and adjust seasoning as necessary. Set aside.
Sandwich Assembly
  1. Spread chickpea salad on the bottom slice of bread.
  2. Add fresh veggies on top of the chickpea filling.
  3. Sprinkle lightly with salt and pepper before capping with the top slice of bread.
  4. Cut in half and serve.
  5. Store leftover filling in an airtight container for up to three days.
