Method

Step‑by‑Step Instructions for Cajun Sausage Pasta
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add your pasta of choice and cook according to the package directions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta, reserving about half a cup of the pasta water, and set it aside while you prepare the rest of your Cajun Sausage Pasta.
  2. In a large skillet, warm 2 tablespoons of olive oil over medium-high heat. Add your sliced Cajun sausage and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. The sausage should be golden and slightly crispy in places. Once finished, transfer it to a plate and set aside, leaving the delicious drippings in the skillet.
  3. Using the same skillet, reduce the heat to medium and add diced onions and bell peppers. Sauté for 3-5 minutes until the vegetables are softened and fragrant. Stir in minced garlic and continue to cook for an additional minute.
  4. Add Cajun seasoning to the sautéed vegetables, stirring to combine, and then pour in one can of crushed tomatoes. Mix thoroughly and simmer for about 5 minutes. Gradually stir in a cup of heavy cream, bringing the mixture to a gentle simmer.
  5. Return the browned sausage to the skillet, and add the drained pasta. Toss all the ingredients together until evenly coated in the creamy sauce. If the mixture seems dry, gradually add reserved pasta water until you reach your desired consistency.
  6. Once combined, remove the skillet from heat. Spoon your Cajun Sausage Pasta into bowls and finish with a generous sprinkle of grated Parmesan cheese and freshly chopped parsley or green onions for brightness. Serve immediately.
